BBQ Chicken Pizza
The crust in this recipe is a mix from the Bulk Barn. So far I've had the most success with bought pizza crusts and they're really not that expensive... especially for how often we eat pizza in our house. It's made mainly with rice flour, corn flour, tapioca starch and cornstarch. It calls for some flax seed to which adds a bit more health!
This recipe is for the topping on this wonderful pizza (this is a personal size and used roughly 1/3 of the recipe. for a large pizza you would need the whole batch). I must give my husband the credit for this one as he made it for my birthday last year. We thought it was definitely worth making again!
Ingredients
1 c BBQ sauce (homemade or bought)
1 T honey (can sub br sugar)
1-2 t molasses (depending on preference)
1/3 c br sugar
1 small onion minced
1/2 bunch cilantro chopped (1/2 c, optional)
2 boneless skinless chicken thighs
1 c cheese (we use mozzarella)
1/2 red pepper sliced
Directions
Combine BBQ sauce, honey, molasses, br sugar, and minced onion in a bowl. chop chicken into small pieces (this is easier if the chicken is partly frozen still) and fry in a skillet until cooked through (a few mins). stir in the sauce and let simmer for a minute or two. pour the sauce onto a cooked pizza crust. sprinkle with cilantro and red pepper slices. top with cheese. bake at 400 degrees F for 7-10 mins or until cheese is bubbly. (cooking time will depend on the temperature of the sauce to start with)
