It can be hard at first but it gets better with time. I was 12 when I first started and the term gluten free wasn't well known. Now there are great resources and options for gluten free food and I'm sure it will only continue to improve! About 3/4...Yes, you can definitely use xanthan gum. About 3/4 tsp xanthan gum is similar to 1 tsp guar gum, but you can use the whole tsp of xanthan gum and it will work fine too.
